People often wonder what we eat at home, so I thought I'd share a glimpse of it with you. I didn't follow any particular recipe for these. Most of these we either came up with on our own or they were foods that I grew up with and just taught myself how to veganize.

Brown rice, green beans, and salad
This sounds simple, it was simple, and it was delicious! I sauteed some mushrooms in a little bit of vegan butter and red wine then I added some veggie stock and some flour to thicken it. Once the brown rice was done, I poured the mushrooms and sauce over the brown rice and mixed it together. Yum! For the green beans I sauteed them with some onions and carrots in a little canola oil, added salt and pepper to taste and that was it! For the salad you can get as creative or simple as you want. Here I just used some mixed greens, carrots, tomatoes, and cucumber. Use your salad dressing of choice. I think we either used italian or a raspberry vinaigrette...or just some white vinegar.
Pozole
This has just the homony in it. I made the red sauce from scratch by boiling the chili pods, blending them, adding some spices, and straining it. It's time consuming, but there's no comparison! This was my first time making this and it actually came out really good!
Salisbury "steak", mashed potatoes, and green beans
This was one of my favorite meals growing up so when I started craving it, I had to learn how to veganize it. I used the flamed grilled Boca patties for this and actually used a packaged gravy (not sure if it's completely vegan). I sauteed the mushroom once again in a little vegan butter and nice dose of red wine. The mashed potatoes have some vegan butter, a little bit of soy milk, and salt & pepper. For the green beans, I think I just steamed them on this occasion.
Sweet potatoes, brown rice, and green beans
I think we bought a big bag of green beans so that's why these several pictures all have green beans in them. For this meal, the green beans and onions were sauteed with a little canola oil and then pepper with a pinch of salt was added. The sweet potatoes were tossed with olive oil, salt, and pepper and baked in the oven at 350 degrees for about 30-45 minutes. The brown rice was made in the rice cooker plain and then I think I just added some dried basil and parsley to it.
Green Enchiladas, Rice & Beans
Lately I stuff the enchiladas with squash, onion, tomato...and sometimes soft slow cooked potatoes. The potatoes give it a creamy almost cheesy texture.
Vegan Pizza
This is a house favorite! We use lots of veggies, a store bought thin crust, and lots of yummy sauce!
No cheese. And it only takes about 15 minutes in the oven!
Stir Fry
This dish has cooked jasmine fried rice with tofu and veggies. Whenever I make stir fry it never comes out the same because I always use different spices.
Tip: to give the tofu and more chewy texture I cook the tofu in a pan on low to medium heat with no oil to let some of the water cook out. Then I marinate the tofu with any sauce that you would normally marinate chicken or beef in. I like doing this also so that the dish has different layers of flavor. The rice, veggies, and tofu are cooked separately with different spices & sauces for lots of flavor!
Soft tacos with refried black beans and spanish rice
These tacos are made with boca crumbles and potatoes, seasoned with just salt and pepper. Toppings are tomatoes, lettuce, vegan cheese, avocado, and salsa. The black beans just have a little bit of garlic powder.
Vegan enchiladas, calabasitas, and refried beans
The enchilada sauce is homemade and I don't remember what was inside because this was from a while ago. The calabasitas are made with mexicorn, squash, onion, and tomato with some spices. The refried beans aren't really fried, they're just warmed through and smashed.
Butternut squash soup, veggie sandwich, and a pickled jalapeno
This probably sounds like a weird combination, but I like jalapenos with almost any sandwich - fresh or pickled depend on my mood and what's available. The soup actually has butternut squash and apples. Tyler's mom made it and it was goooooood! The sandwich has lettuce, tomato, roasted red peppers, olives, veganaise (vegan mayo), and avocado - but I don't think the bread is vegan.

I got this salad at the salad bar on campus. It's got everything in there! So good.
Spaghetti and meatless meatballs w/garlic bread
The meatless meatballs are store bought and you so can't tell the difference! I dare you to try it. The garlic bread here is unfortunately not vegan, if anyone has some helpful vegan tips for that please share!
Avena (oatmeal)
This is the way my abuelita (grandma) used to make it, except I used a little bit of soymilk and I think I used some coconut cream on this batch too. Most of the liquid though is cinnamon infused water with some sugar. Reminds me of my childhood and makes me feel all warm, fuzzy, and cozy inside.
